Chicken & Chorizo Honey Buffalo Tray Bake
Smoky chorizo, golden chicken & sweet-heat! A meal made for sharing!
Ingredients (Serves 4):
- 700g boneless skinless chicken thighs
- 500g baby potatoes, halved
- 2 red onions, cut into wedges
- 2 red bell peppers, sliced
- 150g chorizo, sliced
- 2 tbsp Lumberjaxe Hot Buffalo Seasoning
- 2 tbsp olive oil
- 1 tbsp honey
- 100g feta cheese, crumbled
- Fresh chives, finely chopped
Method
1. Prep the Tray Bake
Preheat the oven to 200°C / 180°C fan / Gas Mark 6.
Add the baby potatoes, red onions, peppers, and chorizo to a large baking tray. Drizzle with half the olive oil and season lightly with salt.
2. Season the Chicken
In a bowl, coat the chicken thighs with the remaining olive oil, Hot Buffalo seasoning, and honey until evenly covered.
Place the chicken on top of the vegetables and chorizo.
3. Roast
Cook in the oven for 35–40 minutes, turning the potatoes halfway through, until the chicken is golden and cooked through and the potatoes are crispy on the edges.
4. Finish & Serve
Remove from the oven and scatter over the crumbled feta and fresh chives.
Serve straight from the tray while hot and crispy.
