What you will need:

1 large chicken

12 good-sized new potatoes

Olive oil

1 whole garlic

2 whole onions

Dry Rub:

 1 tbsp LumberjAxe Buffalo Rub

 1 tbsp LumberjAxe T-Bone Rub


1.) Place one tablespoon of both LumberjAxe Buffalo and T-Bone rub into a small bowl.


2.) Add 3 tablespoons of olive oil and mix together.

3.) Brush the marinade all over the chicken (or any meat of your choice) and leave to rest for 2 hours to infuse the flavours. (saving a little marinade for later)

4.) Place the chicken in the middle of a baking tray.

5.) Peel and slice onions and garlic cloves and add to the baking tray, along with whole new potatoes.

6.) Place this into a pre-heated oven at 160 degrees and leave to cook for 2 hours. (midway through the cook, baste the chicken once with the remaining marinade)

7.) Remove from the oven when golden and leave to rest for 15 minutes.

8.) Enjoy!
